Trentino Alto Adige has been giving us excellent bubbles for about a century, ever since a visionary winemaker, merchant and traveler named Giulio Ferrari introduced the Chardonnay grape to the region.
Trentino bubbles with Trento DOC designation are produced through the Metodo Classico. Trentino Alto Adige is practically the ideal place for the production of these sparkling wines.

Trentodoc expresses the essence of mountain bubbles, produced exclusively using the Metodo Classico from 100% Trentino grapes. It is the first DOC created in Italy for the Metodo Classico and the second in the world after Champagne. There are 40 producers and over 100 labels brought together under the Trentodoc brand, established in 2007 and promoted by the Institute of the same name. At the end of summer, when the Chardonnay and Pinot Nero clusters are ripe, the grapes are harvested by hand and taken to the cellar for pressing. This is the moment of the first fermentation, where the aromatic notes of the original grape variety come to life. After the cuvées are created, the base wine is bottled and enriched with sugar and selected yeasts. This begins the second fermentation, which creates the perlage. The cuvée rests for two to ten years depending on the label. In the silence of the cellar, the ritual of remuage takes place: that daily eighth of a turn, essential for sliding the sediment toward the cork, which will be removed during disgorgement. The process concludes with the addition of the liqueur d’expédition, the secret recipe that defines the stylistic signature of each winery.
